Crab Asparagus Soup

Ingredients
- 2 tbsp. butter
- 1 whole shallot, minced
- 1 garlic clove, minced
- 1 celery stalk, minced
- 6 c. chicken stock
- 1 tsp. salt
- 1/4 tsp. white pepper
- 1 c. fresh or frozen asparagus, cut into 1" pcs.
- 4 oz. cream cheese
- 1 c. heavy cream
- 2 tbsp. sherry
- 6 oz. lump blue crab

Preparation
Step 1
Set wok to MED. Add butter to wok and let melt. Add shallots to wok; cook for 1 min. Add garlic and cook 1 min. Add celery, chicken stock, s&p. Increase wok to SEAR and let simmer 15 mins.
Add asparagus and cream cheese to wok; simmer 5 mins. Use a blender to puree soup to desired consistency. Pour soup back into the wok.
Add cream, sherry, and crab to wok; cook for 3 mins. and serve.
