Cheesy Fish Fillets w/ Spinach

Ingredients
- 2 tbsp. butter
- 2 tbsp. flour
- 1 tsp. instant chicken bouillon
- dash ground nutmeg
- dash cayenne pepper
- dash white pepper
- 1 c. milk
- 2/3 c. shredded swiss or cheddar
- 1 pkg. frozen spinach, thawed & drained
- 1 tbsp. lemon juice
- 1 lb. fish fillets, cut into serving size pcs.
- 1/2 tsp. salt
- 2 tbsp. grated parm.

Preparation
Step 1
Melt butter in a saucepan over low heat. Stir in flour, bouillon, nutmeg, cayenne and white pepper; cook over low heat, stirring constantly, till mixture is smooth and bubbly. Stir in milk; bring to boil and cook, stirring constantly, for 1 min. Add cheese; cook and stir just till it melts.
Remove from heat and set aside. Place spinach in an ungreased 12x8x2 pan or 8" square pan. Sprinkle w/ lemon juice. Arrange fish over spinach; sprinkle w/ salt. Spread sauce on top.
Bake, uncovered, at 350 till fish flakes easily w/ a fork, about 20 mins. Sprinkle w/ parmesan cheese and paprika; return to the oven for 5 mins.
