Ingredients

  • 1 lb. pizza dough or prepared crust
  • 1 pint grape tomatoes, halved
  • 1/2 - 12 oz. jar roasted red peppers, cut into 1/2-inch pieces
  • 3 scallions, finely chopped
  • 2 cloves garlic, finely chopped
  • 1 T olive oil
  • salt & pepper
  • 3 oz. asiago or provolone cheese, finely shredded

Preparation

Step 1

Heat oven to 400°. In a large bowl, combine the tomatoes, roasted peppers, scallions garlic, oil, salt & pepper.

Sprinkle crust with 1/3 of the cheese. Top with tomato mixture and sprinkle with remaining cheese.
