Ingredients

  • 1 package (10 oz) Spinach, fresh,
  • 5 tbsp reduced Fat Mayo with Olive Oil
  • 5 oz Fat Free Plain Greek Yogurt
  • 1/4 tsp Garlic powder
  • 2 dash pepper, black
  • 3 oz Mozzarella Cheese, part skim milk
  • 1/4 cup reduced fat Feta Cheese, Crumbled
  • 10 oz Chicken Breast, no skin
  • 1 tbsp Extra Virgin Olive Oil

Preparation

Step 1

Preheat oven to 350 degrees F.
Spritz an 8-inch baking dish with cooking spray.
Combine 10 oz. of cooked, cubed chicken breast or thighs with 10 oz. spinach in a mixing bowl.
If using frozen spinach, thaw and thoroughly drain first.
Fold in 5 oz. of Greek yogurt, 5 tbsp of low fat mayonnaise, 1/4 tsp. garlic powder, 1 tbsp extra virgin olive oil and a few twists of the pepper grinder.

In a separate bowl, mix together 1/4 cup reduced fat Feta cheese and 3 oz. low fat shredded mozzarella cheese.
Add 1/4 cup cheese mixture to the chicken and spinach and mix well. Spread evenly in the baking dish and sprinkle the rest of the cheese mixture on top.

Bake 40 minutes.
