SAUTEED SHRIMP WITH PEPPERS AND BASIL

Ingredients
- 1 tbsp. olive oil
- 2 cloves garlic, finely chopped
- 12 oz. shrimp, peeled and deveined
- 1 sm. onion, coarsely chopped
- 1/2 med. green bell pepper, cut into strips
- 1/2 med. red bell pepper, cut into strips
- 1/2 med. yellow bell pepper, cut into strips
- 2 tbsp. dry white wine
- Salt and pepper
- 1/4 c. chopped fresh basil
- 1 tsp. thyme

Preparation
Step 1
heat the oil in a non-stick skillet, add the garlic and saute for 10 seconds. Add the shrimp and saute for 3 minutes. Remove the shrimp to a heated plate. Add the onion and saute for 2 minutes. Add the green, red and yellow peppers and saute for 1 minute. Return the shrimp to the skillet, add the wine, season with salt and pepper, and saute for 3 minutes longer. Add the basil and thyme and saute for 1 minute. Adjust the seasoning and serve piping hot. 259 calories.
