Ingredients

  • 1 cup flour
  • 1 cup sugar
  • 1 tsp baking powder
  • 1/8 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp ground cloves
  • 1 tbsp ground flaxseeds
  • 3 tbsp water
  • 1/2 cup unsweetened pumpkin puree
  • 1/4 cup vegan margarine, room temperature
  • 1/2 tsp vanilla extract
  • 1/2 tsp maple extract
  • 1/2 cup raisins
  • 1/2 cup walnuts, finely chopped

Step 1

Preheat oven to 350F (175C).

In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon, ginger, and cloves. Set aside. In a food processor, blend together the ground flax seeds, water, pumpkin, margarine, vanilla, and maple extract. Blend until smooth. Add the raisins, walnuts, and pumpkin mixture to the flour mixture and stir together well. Drop round tablespoonfuls of dough onto cookie sheets, press down flat with your finger, and repeat process until dough is gone. Bake for 12-14 minutes. Let cool before removing from cookie sheet.
