Ingredients
- 2 1/2 c chopped celery including leaves
- 1 /c c chopped red onion
- 1/3 c chopped pitted green olives
- 1/4 c EVOO
- 1 T red wine vinegar
- 1 t chopped fresh oregano
- 1/2 t dijon mustard

Preparation
Step 1
Combine all ingredients and season. Let sit one hour at room temerature. Mix into pasta or tuna or eat on a cracker.
