Ingredients
- 4 oz pizza dough
- 4 oz shredded fontina
- Olive oil
- 1 fennel bulb, trimmed, cored and thinly sliced
- 1 yellow onion, thinly sliced
- Salt and pepper
- Water

Step 1
Preheat oven and baking sheet to 500.
Make fennel and onions: in a large skillet with a lid, heat 1 tbsp olive oil over medium. Add fennel and onion, season with salt and pepper. Cook, stirring, until browned, about 5 minutes. Reduce heat, cover, and cook 5-7 minutes. Uncover, add 1 tbsp water, and cook, stirring, until soft, 2 minutes.
Make pizza: roll out dough to 10 inch round. Top dough with fennel and onions, fontina, and salt and pepper.
Bake until golden, 7-10 minutes.
