Ingredients

  • 900 ml chicken broth
  • 3 cups pieces, peeled yukon gold potatoes
  • 2 cups pieces of peeled sweet potatoes
  • 2 cups pieces unpeeled red skinned potatoes
  • 1/2 cup sour cream
  • 2 tbsp butter or margarine
  • generous dash of ground black pepper

Preparation

Step 1

Heat broth and potatoes to a boil over medium-high heat in a 3qt saucepan.
Reduce heat to medium. Cover and cook for 10 min or until potatoes are tender. Drain, reserving broth.
Mash potatoes with 1/4 cup broth, sour cream, butter and black pepper. Add additional borth, if needed, until desired consistency.
