- 1/4 cup butter
- 1 cup flour
- 2 scant teaspoons salt
- 1 lb. Monterrey Jack cheese - cut into small pieces
- 3 eggs
- 1 cup milk
- 2 pkg. chopped frozen spinach - thawed and drained well
Melt butter in a 9 x 13 glass pan. Beat eggs and stir in remaining ingredients. Pour into dish and mix with butter. Bake. Cut into squares for appetizers. Serve hot or cold. The key to this recipe is to make sure spinach is well drained. Squeeze out water with hands. Bake for 30-40 minutes at 350.
