Black Bean Soup - Guilt Free

Found the original recipe in a Taste of Home Guilt Free Recipe book, changed and added things.

A excellent soup and filling too.

Ingredients

  • 2-3 skinless chicken breasts
  • (season with pepper, smoked paprika, cayenne pepper, salt and garlic powder)
  • 1 celery stalk chopped
  • 1 carrot chopped
  • 4 cloves garlic minced
  • 1 scallion using green tops, chopped
  • 1 green pepper chopped
  • 1 roma tomatoe chopped
  • 1 tbsp olive oil
  • 1 envelope of Swanson's chicken broth boost
  • 6-7 cups water or chicken broth
  • 1 24 oz jar of salsa (your heat)
  • 1 cup long grain rice (raw)
  • 2 tbsp lime juice
  • 1-2 tbsp cumin
  • 1 tbsp chili powder
  • 2 cans (15 oz) black beans drained
  • 1 tsp salt
  • 1 tsp cayenne pepper

Preparation

Step 1

1. Cook chicken in oven or on grill seasoned with spices as listed) cook about 45 minutes. Remove and cut in to small pieces.

2. Saute celery thru tomatoe in olive oil.
3. Add chicken and chicken boost.
4. Add 6 to 7 cups of water or chicken broth.
5. Add remaining ingredients.
6. Simmer, cover and cook till rice is cooked.
7. Reseason to taste

Optional: if you like a thicker soup, remove some broth and mix with cornstarch and return to pot. Stir
