With coffee, tea or a glass of milk, fresh scones can start your day or a well-deserved break. A touch of citrus and chewy raisins are fresh and satisfying.

Ingredients
- 3 3/4 Cups flour
- 1 Cup sugar
- 1 tsp. salt
- 1 tsp. baking powder
- 2 tsp. grated lemon or orange peel (or 2/3 tsp. MINCED LEMON or ORANGE PEEL rehydrated in 1 TB. water)
- 1 Cup cold butter, cut into chunks (2 sticks)
- 3 large eggs
- 1/2 Cup milk
- 1 tsp. PURE VANILLA EXTRACT
- 1 Cup raisins or craisins
- 3-4 TB. coarse sugar, optional

Step 1
Preheat oven to 400°. In a large mixing bowl, combine the flour, sugar, salt, baking powder and citrus peel. Add the butter, one chunk at a time, and mix until the mixture looks like cornmeal. Add the eggs, milk and VANILLA. Mix only until well blended. Fold in the raisins or craisins. Knead 2 or 3 times on a floured surface. Divide into 2 parts. Place on a parchment paper-lined or greased and floured baking sheet. Pat into discs about 1-inch thick. Cut each disc into 8 wedges. Sprinkle with coarse sugar, if desired, and bake at 400° for 20-30 minutes, until a toothpick comes out clean. Let cool 10 minutes before serving.
