Ingredients

  • 1 lb large shrimp - pre-cooked, peeled, deveined
  • 1 tsp salt
  • 1 tsp dried red pepper flakes (or to taste)
  • 3 tbs olive oil
  • 1 medium onion - sliced
  • 1 14.5 oz can diced jalepeno tomatoes
  • 1 cup dry white wine
  • 3 garlic cloves, chopped
  • 1/4 tsp dried oregano

Step 1

Toss the shrimp in a medium bowl with salt and red pepper flakes.

Heat the olive oil in a large skillet over medium high heat. Add shrimp and saute for about 1 minute, toss and continue cooking until just through about 1-2 minutes.

Transfer the shrimp to a large plate and set aside.

Add onion to the skillet (add more olive oil if needed) and saute until translucent. Add tomatoes with their juices, garlic, wine, and oregano. Simmer until sauce thickens (about 10 minutes).

Return shrimp with any accumulated juices to the tomato mixture. Toss to coat.

Serve over pasta or rice.
