Sweet Potato Casserole

  • 3 cups sweet potatoes, mashed
  • 2/3 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1/2 cup butter, melted
  • topping for casserole
  • 1 cup brown sugar
  • 1/3 cup self rising flour
  • 1/3 cup butter, softened
  • 1 cup pecans



Step 1

mix potatoes, sugar,eggs, vanilla and melted butter at medium speed, until smooth. Pour into a buttered casserole dish and top with crumb topping.

for topping, mix ingredients and sprinkle on top of casserole. bake for 30 minutes at 300-325 degrees. (the topping will rise and brown) serves 6
