Ingredients

  • COOKIES:
  • 1 cup rolled oats
  • 1 cup firmly packed brown sugar
  • 1/2 cup butter, softened
  • 1 teaspoon vanilla
  • 1 egg
  • 1 cup all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon cloves
  • 1 cup (3 medium carrots) finely shredded carrots
  • 1/2 cup raisins
  • 1/2 cup chopped pecans (optional)

Preparation

Step 1

Preheat oven to 375°F.

Using a food processor, process oats until it reaches the consistency of flour. Set aside. Using the shredding disc of the food processor, process the carrots.

In the bowl of an electric mixer, combine brown sugar, vanilla, egg and butter; beating well until fluffy. Add oats, flour, baking powder, salt, cinnamon and cloves.Stir in the grated carrots, raisins and nuts (if using).

Drop by large spoonfuls onto greased cookie sheets.

Bake for eight to 10 minutes at 375°F or until golden brown. Cool on wire racks.
