Ingredients
- 2 cans black beans - (15 oz ea) rinsed, drained
- 1/2 cup chopped red onion
- 2 tablespoons chopped fresh mint
- 1 package Athenos Crumbled Feta Cheese with
- Garlic & Herb - (4 oz)
- 4 tablespoons lemon juice
- 2 tablespoons olive oil
- 1/4 teaspoon freshly-ground black pepper

Mix all ingredients. Let stand 10 minutes at room temperature to marinate.
This recipe yields 3 cups.
