Ingredients
- 1 cup all-purpose flour
- 1/3 cup sugar
- 1 1/2 tsp baking powder
- pinch of salt
- 1 egg yolk
- 6 tablespoons milk
- 3 tablespoons unsalted butter, melted
- 1 1/2 cups fresh blackberries

Preparation
Step 1
preheat oven to 450. in a medium bowl, stir together flour, sugar, baking powder, and salt. set aside
in another medium bowl, lightly whisk egg yolk. whisk in milk, then butter. quickly stir in dry ingredients, mixing only until moistened.(batter will be lumpy)
fold in blackberries. spoon into well-greased miniature 1 3/4 inch muffin cups, filling cups almost level full.
bake at 450 9-11 minutes.
makes 20 muffins
