  • 2 Tbsp. melted butter
  • 1 cup firmly-packed dark brown sugar
  • 1 cup pumkin puree
  • 1 tsp. ground cinnamon
  • 1/8 tsp ground cloves
  • grated orange zest of half an orange
  • 1 double crust pie crust (either from scratch or ready-made)

Preparation

Step 1

In small saucepan over medium heat combine: melted butter; stir in brown sugar. Let heat till brown sugar is dissolved into the butter. Stir in pumpkin and spices. Continue to stir over meduim heat for about 3-5 mins. Remove from heat and stir in orange zest. Cool mixture in refrigerator. Once cold, assemble empanadas. Bake for 20-30 mins.
