Roasted Broccoli or Cauliflower with Parmesan

  • • 1 Tablespoon olive oil
  • • Salt and pepper to taste

Step 1

Preheat oven to 400 degrees F. Clean and trim broccoli or cauliflower (cut into florets) and place in bowl with oil, salt, and pepper. Toss broccoli or cauli to coat and then transfer to a rimmed baking sheet. Roast broccoli for 25 minutes – or until tender. Watch carefully and turn broccoli or cauli so that it roasts evenly but doesn’t burn. Transfer broccoli or cauli to the same mixing bowl and mix with parmesan while still hot. Transfer to serving plate
