Fried Confetti Corn (Southern Living)

Ingredients

• 8 slices of bacon
• 4 cups sweet corn
• 1 medium white onion
• 1/3 cup green bell pepper
• 1/3 cup red pepper
• 1 8 oz. pack cream cheese
• 1/2 cup half and half
• tsp salt
• tsp sugar
• tsp pepper

Preparation

Step 1

Colk bacon in skillet until crispy. Remove bacon
reserve 2 tblspns of drippings in skillet

saute corn, onion, peppers in hot drippings 6 minutes or until tender

add cream cheese and half and half until cream cheese melts

stir in sugar salt and pepper. top with bacon
