Ingredients

  • 8 oz fettucine
  • ½ c chopped onion
  • ¼ cup each yellow and red pepper
  • 1-2 cloves garlic-minced
  • 2 T olive or canola oil
  • ¼ c flour
  • 1 can (12 oz) fat free evaporated milk
  • ½ tsp salt
  • ¼ tsp white pepper
  • 1/8 tsp cayenne pepper
  • 1 pound uncooked shrimp
  • 2 T minced basil or 2 tsp dried

Preparation

Step 1

Cook pasta. Saute onion, peppers and garlic in oil until tender. In small bowl combine flour and milk until smooth. Add to veggies. Stir in seasonings. Bring to boil, cook and stir 2 minutes until thickened. Reduce heat. Add shrimp and basil. Simmer uncovered for 3 minutes.

1 ¼ c = 306 calories, 7 g fat, 2 g fiber
