Ingredients

  • Lemon Yogurt Sauce:
  • 1/2 cup plain fat free yogurt
  • 1 tbs Meyer lemon juice
  • 1 1/2 tsp minced fresh mint
  • 1/2 tsp finely grated Meyer lemon zest
  • 1 clove garlic, minced
  • Freshly ground sea salt and pepper to taste
  • Turkey Burgers:
  • 1 20 oz pkg ground turkey
  • 1/3 cup minced red onion
  • 1/4 cup each: chopped pitted Kalamata olives and crumbled feta cheese
  • 2 tbs Meyer lemon juice
  • 1 1/2 tsp each: finely grated lemon zest and greek seasoning
  • 3 pita bread rounds, halved
  • 1 cup lettue
  • 1/2 cup diced tomato

Preparation

Step 1

1. Stir together all sauce ingredients in a small bowl, cover and refrigerate until ready to serve.

2. Stir together turkey, onion, olives, cheese, lemon juice and seasoning in a medium bowl and shape into 6 flat patties. Grill, broil or cook in a non-stick skillet fr 5 min on each side until cooked through.

3. Place a handful of greens into each pita half. Place a burger and diced tomatoes in each and top with yogurt sauce.
