Ingredients
- 1/2 cup flour
- 1/4 cup confectioner's sugar
- 1 stick (1/4 pound) margarine
- 1 cup sugar
- 2 tablespoons flour
- 2 eggs, beaten
- pinch of salt
- juice of 1 lemon
- 1 teaspoon lemon rind

Preparation
Step 1
Mix 1/2 cup flour with 1/4 cup of confectioner's sugar. Cut in 1 stick of margarine until crumbly. Pack firmly in an 8" X 8" pan. Bake at 350 degrees for 15 minutes.
Mix 1 cup of sugar, 2 tablespoons of flour, 2 eggs (beaten),a pinch of salt the juice from 1 lemon and 1 teaspoon over lemon rind. Pour lemon mixture over pastry. Bake 15 - 17 minutes or until set. Sprinkle with confectioner's sugar.
