Crock Pot Beef Roast

Ingredients

  • beef chuck roast about 2-3 pounds in weight
  • liquid smoke or Worcestershire sauce
  • flour for dredging
  • shortening for browning
  • medium or large onion, peeled and quartered
  • 1-2 cups beef broth
  • potatoes and carrots, peeled and chunked

Step 1

Brush one side of the roast with Worcestershire or liquid smoke, season with salt and pepper, let sit several minutes, flip and repeat on the other side. Dredge roast in flour. Brown roast evenly in melted shortening at medium heat in a cast iron skillet. Place roast in crock pot with onions and broth. Cook at low for 5-7 hours, adding potatoes and carrots during the last hour.
