Ingredients
- 5 med. carrots, halved and thinly sliced
- 4 celery ribs, thinly sliced
- 1 large onion, chopped
- 6 garlic cloves, minced
- 3 Tablespoons butter
- 3 (14.5 oz) cans chicken broth
- 2 (15 oz) cans crushed tomatoes
- 3 (15 oz) cans black beans, drained and rinsed
- 2 teaspoons dried basil
- 3/4 t. dried oregano
- 3/4 t. ground cumin
- 3/4 t. chili powder
- 3/4 t. hot pepper sauce
- optional: leftover cooked meat

Step 1
Cook carrots, celery, onion, and garlic in butter until soft.
Add chicken broth, tomatoes, black beans and spices turn to high heat and cook 30 minutes.
Serve with hot cooked rice.
