Virginia's Sweet Potato Souffle

Ingredients

  • souffle:
  • 7 to 9 medium yams
  • 3/4 stick sweet butter
  • 1 cup milk
  • 3 extra large eggs
  • 2 tsp vanilla
  • 1/2 tsp salt
  • 3/4 cup sugar
  • topping:
  • 3/4 stick sweet butter
  • 1 cup brown sugar
  • 1/2 cup flour
  • 1 cup pecans, chopped, but not too fine

Preparation

Step 1

souffle:
-boil, peel and mash yams in a large mixer
-combine the rest of th ingredients in order, making sure eggs are mixed one at a time.
-beat for 3 minutes.
-pour into a 9 x 13 baking dish and set aside.

topping:
-preheat oven to 350 degrees
-set butter aside until it reaches room temperature
-mix all dry ingredients well
-add butter in pieces and mix until texture is crumbly.
-sprinkle on souffle and bake for 30 minutes
