Well, this isn't a recipe as far as a bunch of ingredients goes, it's more of a how-to on kale. Enjoy!

  • What to look for: Buy bunches that are not wilted or slimy. Small or big leaves, either is fine. One bunch is enough for adding to a soup. If you want a side dish, get 2-3 bunches.

Step 1

First, wash the leaves like you would lettuce. You can rinse them under water, or use a salad spinner. Next, run a knife down the vein of the kale on both sides to remove the stem. Chop the kale coarsely.

I added it to my steamer. You can cook it on the stove in a little water or broth. As it cooks, it will reduce down and turn darker.

I think kale has a complex taste, sort of like collard greens. Because of this, it is not the best all by itself. Children will probably not run to it immediately. I use it as an addition to soups, and my kids eat it. It tends to soak up the flavor of whatever you cook it in, such a tomato, bacon, or broth flavors. Find what your kids enjoy and make the kale taste like that! My kids love bacon and sugar, so when I cook greens as a side, I use a vinegar/sugar base, with bacon bits in it.
