Perfect Potato Soup

- 6 slices thin bacon, cut into 1-inch pieces
- 3 carrots, scrubbed clean and diced
- 3 stalks celery, diced
- 1 medium onion, diced
- 6 small russet potatoes, peeled and diced
- 1/2 teaspoon Cajun spice mix, plus more if needed
- Salt and freshly ground black pepper
- 8 cups low-sodium chicken or vegetable broth
- 1 cup milk
- 3 tablespoons all-purpose flour
- 1/2 cup heavy cream
- 1 teaspoon minced fresh parsley
- 1 cup grated Cheddar
Skillet Corn Cake with Stewed Cherries

Place a 10-inch cast-iron skillet in the oven and preheat the oven to 350 degrees
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 3/4 teaspoon salt
- 6 tablespoons yellow cornmeal
- 2 large eggs
- 1 large egg yolk
- 2/3 cup milk
- 1/2 cup olive oil
- 2 teaspoons grated lemon zest
- 1 1/2 cups sugar
- 2 tablespoons unsalted butter
- Two 10-ounce bags frozen pitted cherries
- 1/4 cup freshly squeezed lemon juice
Honey Whole Grain Dinner Rolls

Step 1- Proof the yeast, by mixing the 1/4 cup warm water, yeast and 1/2 tsp honey/sugar in a small bowl
- 1/4 cup very warm (not hot) water
- 1 Tbsp active dry yeast
- 1/2 tsp honey or sugar
- 2 cups filtered hot water (not boiling)
- 1/3 cup melted butter or coconut oil
- 1/2 cup honey
- 2 tsp sea salt
- 7-9 cups whole grain flour (whole wheat, Kamut, spelt)- sprouted flour is best
Yellow Squash Casserole

Mix stuffing and butter (save 1/2 mixture) and spoon rest into casserole
- 3 C Pepperidge Farm Com Bread Stuffing
- 1/4 C Butter Melted
- 1 Can Cream of Chicken soup
- 2 Yellow Squash
- 2 Zucchini
- 1/4 C Shredded Carrots
- 1/2 Cheddar Cheese
- 1/2 Sour Cream
Crunch Crazy Asparagus Spears

Preheat the oven to 425 degrees F
- 1 pound medium asparagus (about 20 spears)
- 2 egg whites
- Kosher salt and freshly cracked black pepper
- 1 tablespoon mayonnaise
- 2 cups panko breadcrumbs
- 1/2 cup grated Parmesan
- 1 teaspoon Italian seasoning
- 1 teaspoon paprika
- Extra-virgin olive oil
Chicken Parmigiana

Heat oven to 350. Heat spaghetti or tomato sauce
- 2 cups italian tomato sauce (may use canned spaghetti sauce)
- 1 lg. Egg
- 2 tbsp. Water
- 2/3 cup dry bread crumbs
- 1/3 cup parmesan cheese
- 6-8 boneless, skinless chicken breast
- 1/4 cup olive oil (or vegetable oil)
- 2 cups shredded mozzarella cheese
Glazed Baby Carrots

1. Place 1 tablespoon of the butter and all of the water in a medium saucepan
- 2 tbls. butter or margarine
- 3/4 cup water
- 1 pound whole baby carrots (peeled)
- 2 tbls honey or maple syrup
- 2 tbls orange juice
- 1 tbls. brown sugar
- 1/8 tsp fresh ground nutmeg
- 1/8 tsp. salt
- 1/8 tsp. ground pepper
- 1/2 tsp. parsley flakes

- 3 eggs
- 2 1/2 cups sugar
- 2 cups ripe figs, mashed
- 3/4 cup vegetable oil
- 2 cups flour
- 1 cup whole wheat flour
- 2 tsp. baking soda
- 1 tsp. salt
- 1/4 tsp. cardamom
- 1/2 tsp. cinnamon
- 1/4 -1/2 tsp. orange blossom water (optional)
- 1/2 cup buttermilk
- 1 cup chopped pecans
Vegetable Corn Chowder

Melt margarine in dutch oven over medium heat
- 1 Tbsp. Butter
- 1 medium bell pepper, coarsely chopped
- 1 medium red bell pepper, coarsely chopped
- 3/4 cup sliced green onions
- 3 cups water
- 3/4 pound new potatoes, cut into chunks
- 1 Tbsp. Chopped fresh or t tsp. Dried thyme leaves
- 1/2 tsp. Salt
- 1 cup half and half
- 1/8 tsp. Pepper
- 2 cans cream style corn
Canned Apple Pie Filling
