  • Wild Rice Stuffing:
  • 1-1/2 lb. pork loin roast, butterflied
  • 2 tsp. ghee (clarified butter)
  • 1/2 chopped celery
  • 1/2 chopped onion
  • 1 cup uncooked wild rice
  • 1 clove minced garlic
  • 2 cups fat-free, less-sodium chicken broth
  • 1/4 cup dried cranberries
  • 1/4 cup chopped pecans, toasted
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • Glaze:
  • 1 Tbls. honey
  • 1 Tbls. melted butter
  • 1 tsp. Dijon mustard
  • 1/4 tsp. dried rosemary
  • 1/4 tsp. dried thyme
  • 1/4 teaspoon ground grains of paradise (or black pepper)
  • Turkey stuffing:
  • 1/2 lb. ground turkey
  • 1/4 cup chopped onion
  • 1 clove minced garlic
  • 1 egg
  • 1/8 tsp. hickory seasoning or liquid smoke
  • 3 rashers (slices) of uncooked bacon, cut small
  • 2 Tbls of oats
  • 1 Tbls. finely chopped fresh sage (or 1 tsp. dried sage)
  • 1/4 tsp. salt
  • 1/4 tsp. ground grains of paradise (or ground back pepper)
