  • 5 cups water (or chicken stock for a richer flavor)
  • Turkey neck, heart, and gizzard from inside the turkey (not the liver)
  • 1/2 onion, chopped
  • 1 bay leaf
  • 4 tbsp reserved fat or melted butter from roasting pan
  • 1/3 cup all purpose flour
  • 1 tablespoon chopped fresh sage
  • Salt and fresh ground black pepper to taste

  • 1 lb. package short pasta (penne, elbow macaroni, etc.)

  • 1/2 cup bread crumbs (English muffin toasting bread or Panko in the mix suggested)
