Turkey Gravy

To make an easy turkey stock: add the water, turkey neck, heart, gizzard, onion, and bay leaf to a saucepan
- 5 cups water (or chicken stock for a richer flavor)
- Turkey neck, heart, and gizzard from inside the turkey (not the liver)
- 1/2 onion, chopped
- 1 bay leaf
- 4 tbsp reserved fat or melted butter from roasting pan
- 1/3 cup all purpose flour
- 1 tablespoon chopped fresh sage
- Salt and fresh ground black pepper to taste
Roasted Root-Vegetable Pizza

Preheat oven to 475 degrees, with racks in upper and lower thirds
- Olive oil
- 1 pound Basic Pizza Dough, or store-bought pizza dough, fresh or frozen (thawed)
- 8 ounces mozzarella cheese, shredded (2 cups)
- 6 cups (about 1/2 recipe) Roasted Root Vegetables
- 1 cup ricotta cheese
- 1 tablespoon fresh rosemary (optional)
- Coarse salt and freshly ground pepper
Green Bean and Almond Soup

- 3 tablespoons olive oil
- 2 onions, peeled and chopped
- 1 garlic clove, peeled and smashed
- 3 carrots, peeled and sliced
- 500 grams (a little over a pound) green beans
- Fine sea salt, freshly ground pepper
- 1 liter (4 cups) homemade vegetable stock or water
- 100 grams (1 cup) powdered almonds
Smoked Gouda Mac and Cheese

Preheat oven to 375 degrees F
- For the topping:
- 1 lb. package short pasta (penne, elbow macaroni, etc.)
- 5 tablespoons butter
- 1 cup diced onion
- 5 tablespoons all-purpose flour
- 3 cups milk
- 1 cup heavy cream
- 1 teaspoon paprika
- 1 teaspoon salt
- 1 teaspoon fresh ground black pepper
- 1 Tbs. tomato paste
- 1/8 tsp of cayenne pepper
- 1/8 tsp of freshly grated nutmeg
- 8-oz sharp white cheddar cheese, grated and divided (about 2 cups)
- 8-oz smoked Gouda cheese, grated and divided (about 2 cups)
- 1 cup (about 4 ounces) grated Gruyere
- 1/2 cup cottage cheese
- 1/4 tsp hickory flavor
- 1/4 cup melted butter
- 1/2 cup bread crumbs (English muffin toasting bread or Panko in the mix suggested)
Mashed Potato Bread

- 3/4 cup warm milk
- 2 tablespoons oil
- 2 tablespoons melted butter
- 1 1⁄2 cups luke warm mashed potatoes, divided
- 3 1⁄4 cups white bread flour

- 2 tablespoons sugar
- 1 1⁄2 teaspoons yeast
Oven Roasted Tomato Soup

- 2 pounds fresh tomatoes
- 5 cloves garlic, peeled
- 2 small yellow onions, sliced
- 3 tbls. extra-virgin olive oil
- 1 quart chicken stock
- 2 bay leaves

- 1/2 tsp. baking soda
- 1/4 cup chopped fresh basil leaves or 1 tbls. dried basil - optional
Old Fashioned Spice Cake

- 2 1/2 Cups sifted cake flour
- 2 tsp. Baking powder
- 1/2 tsp. Soda
- 1/2 tsp. Salt
- 1/4 tsp. Cloves
- 1/4 tsp. Nutmeg
- 1/2 tsp. Allspice
- 1 tsp. Cinnamon
- 1/2 cup shortening
- 1 1/4 cups packed brown sugar
- 3 eggs
- 1 cup buttermilk

- 1/2 recipe Pate Sucree for Pies and Galettes
- 1 tablespoon turbinado sugar, plus more for sprinkling
- 1 tablespoon all-purpose flour, plus more for work surface
- 1 tablespoon granulated sugar
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon freshly grated nutmeg
- 5 cups pitted plums, sliced 1/4-inch thick (about 5 medium)

Beef Roast in Red Wine (Carni Arrosto al Vino Rosso)

Place half the sliced onions into the bottom of a slow cooker
- 1 small onion, very thinly sliced
- 3 1/2 pounds boneless beef chuck roast
- 1 teaspoon kosher salt
- 1 teaspoon freshly ground black pepper
- 4 large cloves garlic, very thinly sliced
- 2 cups dry red wine
- 2 (14.5 ounce) cans diced tomatoes, undrained
- 1 cup beef broth
