Burgundy Mushrooms

Thoroughly wash the mushrooms and throw them into a large stockpot
- 4 pounds white button mushrooms
- 1 litre Burgundy wine (other dry red wines will work)
- 2 cups boiling water
- 1/2 pound (2 sticks) butter
- 1 1/2 teaspoons Worcestershire sauce
- 1 teaspoon dill seed
- 1 teaspoon freshly ground black pepper
- 4 beef bouillon cubes
- 4 chicken bouillon cubes
- 4 cloves garlic, peeled

Pan-Seared Pork Chops With Roasted Avocado, Broccoli and Sherry Vinaigrette

- Kosher salt
- 2 cups broccoli florets
- 4 or 5 thick-cut boneless or bone-in pork chops (6 to 8 ounces each)
- Freshly ground black pepper
- 1 tablespoon vegetable oil
- Flesh of 2 or 2 1/2 firm Hass avocados, cut lengthwise into quarters
- 3 tablespoons extra-virgin olive oil, plus more for the avocados
- 2 teaspoons minced garlic
- 2 teaspoons sherry vinegar
- 2 teaspoons minced shallot

- For the Cookies:
- Box of Cake Mix (any flavor – I used Duncan Hines Dark Chocolate Fudge and French Vanilla)
- 2 Eggs
- Vegetable Oil (use amount called for on box directions for cake recipe)
- For the Frosting:
- 1 cup unsalted butter, softened and cut into cubes
- 4 cups powdered sugar, sifted
- 5-6 tablespoons heavy whipping cream
- 2 teaspoon peppermint extract
- red gel food coloring (optional - you could leave the frosting white)
- Pinch of salt
- Crushed candy canes, for garnish
