- 1 teaspoon oregano
- 4 boneless skinless chicken breast halves
- 1 can whole peeled tomatoes (with juice)chopped (15 ounces)
- 1/2 cup crumbled feta cheese
- 2 cups cooked orzo
EGGPLANT SALAD (TURKISH)

Peel and cut eggplant in 3/4 inch cubes
- 1 large eggplant (about 1 pound)
- 5 cloves garlic, chopped
- 4 tablespoons vinegar
- 1 medium tomato, sliced
- olive or salad oil for frying
- salt and pepper

1. Melt butter and oleo (let cool), mix first 6 ingredients together, add flour as much as it will take

- 1/2 pound butter
- 2 eggs
- 1 cup milk
- 3 teaspoons baking powder

- sesame seeds
- black caraway seeds
IMITATION CRAB MEAT SALAD

Chop all ingredients fine and mix together
- Imitation crab
- 1 can corn
- 1 egg, hard boiled
- 1/4 cup cooked rice
- cilentro
- mayonnaise/sour cream
SWEET POTATO SOUP

Cook potato in water for about 20 minutes till soft
- 1 bunch Cilantro, chopped
- 1 medium onion, chopped
- 2 cloves garlic, crushed
- 1 1/2 teaspoons cumin
- 1/4 teaspoon cinnamon
- 1/8 teaspoon crushed red pepper
- 1 can tomatoes
- 2 cans vegetable broth
- 1/4 cup peanut butter, creamy
- 2 1/4 pounds sweet potato, cut 1 1/2" thick
FARM STAND SALSA

Combine all ingredients in a large mixing bowl, tossing to coat
- 2 ears fresh corn, cut off cob
- 1/2 medium red onion, diced
- 2 green onions, white & green parts, chopped
- 1 1/2 pints cherry tomatoes, halved
- 1 avocado, pitted peeled, chopped in chunks
- 1 jalapeno, sliced
- 1/4 bunch fresh cilantro,, leaves chopped
- 1 lemon, juiced
- 1 lime, juiced
- 1/4 cup extra virgin olive oil
- sea salt and freshly ground black pepper

Place your soft butter and sugar in a bowl and mix with your hand mixer until creamed
- Greek Easter Koulourakia/cookies
- 1/2 kg. unsalted butter (room temp.)
- 7 – 7 1/4 cups all purpose flour
- 4 large eggs
- 2 cups granulated sugar
- 1 Tbsp. vanilla extract
- 1/2 cup fresh orange juice
- 1 Tbsp. of baking powder
- pinch of baking soda
- zest of three oranges
- pinch of salt
- 1 tsp. of ground Mastiha resin (place the mastiha in the freezer for a couple of hours, then remove and place between 2 sheets of cling wrap, crush to a powder with your rolling pin and add to your recipe)
- sesame seeds for topping
- 2 egg yolks + 2 Tbsp. milk for eggwash
- Pre-heated 350F oven
MEXICAN TOMATO SAUCE (SALSA)

Boil water and take skin off tomatoes
- 3 pounds tomatoes
- 1 can cut tomatoes
- 3 jalapenos, chopped
- 4 cloves garlic, chopped
- 1/2 bunch cilantro, chopped
- 1 onion, chopped
TORTELLINI TOMATO SPINACH SOUP

IN a 3 quart soup pot, heat olive oil over medium high heat
- 1 tablespoon olive oil
- 1/2 cup onion (about 1/2 sml onion), minced
- 1 clove garlic, minced
- 6 cups 4-6 cups broth, chicken or veggie
- 1 14 ounce can whole tomatoes , crushed
- 1 9 ounce pkg fresh tortellini or 4 servings dried
- salt and pepper
- 10 ounces fresh or frozen spinach, drained and chopped
- 1/4 cup freshly grated parmesan, loosely packed
WINE COOKIE

1. Mix all ingredients together
- 1 cup White wine
- 1 cup Canola or Mazola oil
- 1/2 cup Sugar
- 1 egg white
- 2 teaspoons baking powder
- 1/2 teaspoon Mahleb
- 1/2 teaspoon Black Seeds (caraway)
- 4 cups Flour
