PARMESAN ROASTED ASPARAGUS

1. Preheat the oven to 400F 2
- 2 1/2 pounds fresh asparagus (about 30 large)
- 2 tablespoons olive oil
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1/2 cup grated parmesan cheese
- 2 lemons cut in wedges, for serving
Pollo Asada Sweet Potato Fries

Instructions Start by baking your fries according to package directions
- 1 bag of Alexia Sweet Potato Fries with Sea Salt, Or Chipotle Spicy Fries (or 1/2 and 1/2) baked
- 1 lb Pollo Asada, grilled and chopped
- 1 can black beans, drained
- 1 avocado
- 1/2 lime, juiced
- 1 bunch of cilantro, chopped - some reserved for garnish
- 1/2 white onion, chopped
- 1 clove of garlic, minced
- 1/2 cup cheddar cheese
- 1/4 cup Greek Yogurt
- Salsa or Hot Sauce, optional
TABULE

Drain bulghur and mix all ingredients together
- 3/8 cup bulghur in cool water
- 1 bunch parsely, chopped fine
- 1 bell peppers, chopped fine
- 1 tomatoes, chopped fine
- 1 bunch scallions
- some mint crushed or fresh
- oil
- lemon/salt
CABBAGE SALAD

Mix all ingredients together
- 1 head cabbage sliced very, very thin
- olive oil
- lemon juice
- vinegar
- 3 garlic cloves
- mint cayenne
STUFFED CABBAGE

Put rice in small amount of hot water and keep in warm place
- 1/3 cup rice
- 1 pound very lean ground beef
- 2 medium onions
- 1 small green pepper
- 1 small bunch parsely
- 1/2 stick butter
- 1 teaspoon thyme
- 1 teaspoon sugar
- 1 can tomato sauce
- 1/4 stick butter
- 1/2 apple
- 2 plums
- 1 head cabbage
TUNA FISH SALAD

Mix all ingredients together
- 1 can tuna
- 1 red onion, chopped fine
- 2 hard boiled eggs, chopped fine
- mayonnaise
- pepper and some oregano
VEGGIE MEDLEY

1. Cut all veggies into large chunks, stir in olive oil and diced tomatoes
- 1 Japanese eggplant (or a very small one)
- 2 zucchini
- 2 yellow squash
- 1 red onion
- 2 tomatoes
- 1 potato
- 4 cloves garlic
- 1/4 cup olive oil
- 1 can diced tomatoes
YOGURT SALAD

Mix all ingredients together
- 1 Yogurt, drained
- 4 cloves garlic
- 1 cucumber, chopped fine
- 3 roma tomato, chopped fine
- 1 small bag peas
- 5 black olives, chopped fine
SOURJOUK

MIX ALL INGREDIENTS TOGETHER
- 1 LB GROUND TURKEY OR CHICKEN OR BEEF
- 1 TEA CORIANDER
- 1 TEA ALL SPICE
- 1 1/4 TEA CUMIN
- 1 TEA CHILI POWDER
- 4 GARLIC CLOVES SMASHED
- SALT
- OPTIONAL
- ADD PAPRIKA OR CAYENNE
Zucchini and Goat Cheese Frittata

- 1 small zucchini
- 1/2 small purple onion, thinly sliced
- 3 tablespoons butter
- Kosher salt and freshly cracked black pepper
- 10 eggs, well beaten with 2 tablespoons water (can be done with hand mixer or in blender)
- 4 ounces goat cheese
