Vegetable Quinoa Soup

Going to try this using Eggplant, the reason I make smaller or half recipes is I use a 1 1/2 Quart Crock Pot and th

- 1 1 1 medium onion, diced
- 2 2 2 cloves garlic, minced
- 2 2 2 medium carrots, chopped
- 2 2 2 celery stalks, chopped
- 1 1 1 small zucchini, chopped
- 1 1 1 yellow squash, chopped
- 1 1/2 1 1/2 3/4-inch cups fresh green beans, broken or cut into 3/4-inch pieces
- 1 1 1 box (32 ounces) vegetale broth (I used Pacific Natural Foods)
- 1 1 ounce) can 1 (15 ounce) can diced tomatoes
- 2 2 2 bay leaves
- 1 1 1 teaspoon dried thyme
- 1/3 1/3 1/3 cup chopped fresh basil
- 2 2 2 cups cooked quinoa
- to and black pepper, to taste

Hot Hard Apple Cider

Hot Hard Apple Cider is the perfect drink on a chilly day
- 8 to 10 ounces spiced rum
- 8 cups apple cider
- Juice of one large orange
- Juice of one large lemon
- 3 tablespoons brown sugar
- 4 whole cloves
- 4 whole allspice berries
- 3 cinnamon sticks
- 3 star anise pods
Reboot - Meal - Butternut Squash Roasted

Preheat oven to 425 F/ 218 C
- Directions:
- 1 butternut squash
- 1 Tbsp. olive oil, plus more for dressing at the end
- 1/4 cup vegan parmesan cheese (or regular high-quality parmesan if you prefer)
- Sea salt and pepper to taste
- Dash of fresh chilies
- Sprinkle of pumpkin seeds
- Sprinkle of lemon zest and squeeze of lemon juice
- Preheat oven to 425 F/ 218 C.
- Cut off the top and bottom of the butternut squash.
- Remove the skin by peeling or using a sharp knife. Make sure you peel off any green or white parts, you only want to see orange.
- Chop squash into cubes and toss with olive oil.
- Add to a baking rack on a baking sheet so the squash is cooked evenly all around.
- Season with salt, pepper and vegan parmesan cheese.
- Cook for 20 – 25 minutes, or until golden brown, crispy on the outside and soft on the inside.
- Remove from oven then sprinkle on chilies, pumpkin seeds, olive oil, lemon zest and juice just before serving.
Soup - Sweet Corn and Chicken Soup

Pour 10 cups water into a big stock pot and bring to a boil over high heat
- 1 leek, green parts too if you have 'em, sliced in half and thoroughly washed
- 1 carrot, chopped in half
- 3-inch hunk fresh ginger
- 1 teaspoon whole coriander seeds
- 1 teaspoon whole black peppercorns
- 2 chicken breasts on the bone, with skin
- 3 (14-ounce) cans creamed-style corn
- 2 chicken bouillon cubes, crumbled
- 3 tablespoons finely chopped ginger
- 4 scallions, chopped finely, white and green parts (reserve some green for final garnish)
- 1 teaspoon sesame oil
- 1/4 cup cornstarch
- 1/4 cup cold water
- 2 egg whites
- 1 teaspoon unseasoned rice vinegar
- Kosher salt and freshly ground black pepper
- Soy sauce, for serving
- Special equipment: cheesecloth

1. Heat oven to 375°F. Spray 12 regular-size muffin cups with cooking spray
