Chicken - Hawaiian Chicken

Electric Waterless Skillet Recipe
- Rice
- 1 cup rice
- 2 cups water
- Chicken
- 1 pound chicken breasts, cubed
- 1 onion, chopped #2 cutting cone
- 1 red pepper, diced
- 1/2 cup pineapple juice
- 1 cup, ketchup
- 1/2 cup low sodium soy sauce
- 2 tablespoons corn starch
- 1/2 teaspoon ground ginger
- 1 tablespoon Sugar (or sweetener of choice)
- 1 8 oz can pineapple chunks

Smoothie - Mixed Berry Maca Protein Shake

Place all ingredients into a high-powered blender and blend for 45 – 60 seconds
- Large handful of mixed frozen or fresh berries (blueberries, raspberries, strawberries)
- 1/2 banana
- 1 cup/250 ml hemp milk or almond milk
- 1 scoop vanilla plant based protein powder (Sunwarrior is a great brand!)*
- 1 teaspoon maca powder
- 1 Tbsp. coconut oil
- 1 teaspoon chia seeds
- Note: If you don’t have protein powder, you can use two heaping Tbsp. of hemp seeds and add a dash of vanilla.
Sweet Potato Casserole

- CASSEROLE:
- 2 1/2 pounds sweet potatoes (3 medium), peeled and cut into 2-inch chunks
- 2 large eggs
- 1 tablespoon canola oil
- 1 tablespoon honey
- 1/2 cup 1% milk
- 2 teaspoons freshly grated orange zest
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt, or to taste
- TOPPING
- 1/2 cup whole-wheat flour
- 1/3 cup packed brown sugar
- 4 teaspoons frozen orange juice concentrate
- 1 tablespoon canola oil
- 1 tablespoon butter, melted
- 1/2 cup chopped pecans (1 3/4 ounces)

- 1/4 cup Baker's Special Dry Milk or nonfat dry milk
- 3 tablespoons sugar
- 1 1/4 teaspoons salt
- 1 tablespoon instant yeast
- 3 large eggs
- 1/4 cup lukewarm water
- 10 tablespoons butter
- Use 3 large eggs + 1 egg yolk, if desired — this will allow you to brush the leftover egg white on the loaf if you're planning to garnish it with sugar
