- 1 tablespoon olive oil, plus 1 to 2 additional tablespoons for sauteing
- 1/2 cup chopped onion
- 1/2 cup chopped bell pepper
- Kosher salt and freshly ground black pepper
- 2 teaspoons minced garlic
- 4 ounces mushrooms, sliced
- 3 cups vegetable broth
- 1 cup dry split peas, picked and rinsed
- 1/2 cup dry brown rice
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 3/4 cup plain dry bread crumbs, plus 1/4 cup for coating

Chicken, Spinach & Pesto Soup

1. Heat 2 teaspoons oil in a large saucepan or Dutch oven over medium-high heat
- 2 teaspoons plus 1 tablespoon extra-virgin olive oil, divided
- 1/2 cup carrot or diced red bell pepper
- 1 large boneless, skinless chicken breast (about 8 ounces), cut into quarters
- 1 large clove garlic, minced
- 5 cups reduced-sodium chicken broth
- 1 1/2 teaspoons dried marjoram
- 6 ounces baby spinach, coarsely chopped
- 1 15-ounce can cannellini beans or great northern beans, rinsed
- 1/4 cup grated Parmesan cheese
- 1/3 cup lightly packed fresh basil leaves
- Freshly ground pepper to taste
- 3/4 cup plain or herbed multigrain croutons for garnish (optional)

- 3 (15 oz.) cans Great Northern beans
- 1 large organic sweet onion, diced
- 1/8 cup organic molasses
- 1/4 cup maple syrup
- 1 tablespoon Dijon mustard
- 2 cloves garlic, minced
- 1 teaspoon thyme
- 2 teaspoons (each) sea salt and cracked black pepper
- 4 slices bacon, cooked and chopped
