  • 1 Cup chopped zucchini (about 1 large zucchini)
  • 1 Cup chopped carrots (about 2 medium carrots)
  • 5 garlic cloves (3 minced for the meatballs; 2 chopped for the pesto)
  • 1/4 Cup almond flour
  • 1 egg
  • 1 Pound ground chicken
  • 1 Teaspoon Sea salt
  • 1 Teaspoon ground pepper
  • 1 Teaspoon chili powder (optional)
  • 2 Cup fresh spinach
  • 1 Cup fresh basil
  • Pinch sea salt & pepper to taste
  • 3 Tablespoon extra virgin olive oil
