Baked Mashed Potatoes, with Pancetta, Parmesan Cheese, and Breadcrumbs

Preheat the oven to 400 degrees F
- 4 pounds russet potatoes, peeled, cut into 1-inch pieces
- 1 stick butter, melted plus 1 tablespoon at room temp
- 1 cup whole milk, at room temperature
- 1 1/2 cups shredded mozzarella
- 1 cup freshly grated Parmesan, divided use
- 8 oz pancetta, diced, cooked and drained of excess oil
- Salt and freshly ground black pepper

Roasted Cauliflower with Parmesan and Pancetta

Preheat the oven to 350 degrees F
- 1 head cauliflower, cut into pieces (about 6 cups)
- 4 ounce piece pancetta, diced
- 1/4 cup butter
- 1/4 cup all-purpose flour
- 1 1/2 cups milk
- 1 clove garlic, whole
- 1 teaspoon red pepper flakes
- 1 cup grated Parmesan
- 1/4 teaspoon salt

Chicken Parmesan

Preheat the oven to 500 degrees F
- 3 tablespoons olive oil
- 1 teaspoon chopped fresh rosemary leaves
- 1 teaspoon chopped fresh thyme leaves
- 1 teaspoon chopped fresh Italian parsley leaves

- 8 (3-ounces each) chicken cutlets
- 1 1/2 cups Simple Tomato Sauce, recipe follows or purchased marinara sauce
- 1/2 cup shredded mozzarella

- I used panko bread crumbs with parm cheese and egg wash and flour to coat instead of grilling
Tuna Salad

Brush the tuna steaks with olive oil, and sprinkle with salt and pepper
- 2 pounds very fresh tuna steak, cut 1-inch thick
- 4 tablespoons olive oil, plus extra for brushing
