Hearty Taco Salad

In small skillet, cook beef over medium heat until no longer pink; drain
- 1/2 pound lean ground beef (90% lean)
- 1/3 cup water
- 2 tablespoons taco seasoning
- 2 cups torn mixed salad greens
- 1 cup canned red beans, rinsed and drained
- 1-1/4 cups coarsely crushed nacho tortilla chips
- 1/2 cup shredded cheddar cheese
- 1 medium tomato, diced
- 1/4 cup chopped onion
- 2 tablespoons sliced ripe olives, drained
- 3 tablespoons green goddess salad dressing
- 3 tablespoons prepared ranch salad dressing

Preheat oven to 350 F. Boil pasta; drain
- 2 1/2 cups ziti pasta
- 1/2 pound ground beef
- 26 ounce jar spaghetti sauce
- 1 cup cottage cheese
- 2 cups shredded mozzarella cheese

- Grated Parmesan topping
Peanut Butter Cup Cupcakes #2

- 1/3 cup shortening
- 1/3 cup peanut butter
- 1-1/4 cups packed brown sugar

- 1-3/4 cups all-purpose flour
- 1-3/4 teaspoons baking powder
- 1 teaspoon salt
- 1 cup milk

- 1 (1-ounce) envelope dry onion soup mix

Lime Pepper Kebabs

n a large bowl, combine the lime juice, olive oil, honey, and black pepper; mix well
- 1/4 cup lime juice
- 1/4 cup olive oil
- 2 tablespoons honey
- 2 teaspoons black pepper
- 1 1/4 pounds beef top or bottom round, cut into 24 one-inch cubes
- 6 fresh jalapeño peppers
- 2 frozen ears of corn on the cob, thawed, each cut into 6 equal-sized pieces (see Note)
- 1 large red bell pepper, cut into 12 chunks
- 6 wooden or metal skewers
Sweeter Potato Dumplings

In a soup pot, bring the water and broth to a rolling boil over high heat
- Makes: 1 dozen
- 6 cups water
- 2 cans (10-3/4 ounces each) condensed chicken broth
- 2 cups warm mashed potatoes
- 1 1/4 cups all-purpose flour
- 2 eggs
- 1 1/2 teaspoons cornstarch
- 1/2 teaspoon baking powder
- 1/2 teaspoon sugar
- 1/8 teaspoon ground nutmeg
- 1/8 teaspoon ground cinnamon
- 1/2 teaspoon salt
Super Easy Chicken Pot Pie

1 Heat oven to 425°F. Make pie crusts as directed on box for Two-Crust Pie, using 9-inch glass pie plate
- 1 box refrigerated pie crusts, softened as directed on box
- 1 can (18.6 oz) Progresso® Rich & Hearty chicken pot pie style soup
- 2 cups frozen mixed vegetables, thawed, drained
- 2 tablespoons all-purpose flour

- 16-oz jar four cheese Alfredo sauce or use your own
- 1 cup shredded Gruyere or Swiss cheese
- 2-3 cups sliced cooked turkey or chicken
- 5 English muffins, split with fork and toasted
- 3 tbs grated Parmesan cheese
- 1 tba torn fresh basil leaves or 1/2 tsp. dried basil leaves
- 1/2 cup chopped grape tomatoes
Orange-Maple Glazed Chicken

In small saucepan, combine orange juice, syrup, vinegar, mustard, 1/2 teaspoon salt and 1/4 teaspoon pepper
- 1/3 cup orange juice
- 1/3 cup maple syrup
- 2 tablespoons balsamic vinegar
- 1-1/2 teaspoons Dijon mustard
- 1 teaspoon salt, divided
- 3/4 teaspoon pepper, divided
- 1 tablespoon minced fresh basil or 1 teaspoon dried basil
- 1/2 teaspoon grated orange peel
- 6 boneless skinless chicken breast halves (6 ounces each)
