Coconut Cream Pie #2

Bake pie shell according to package directions; set aside to cool
- 1 (9-inch) frozen ready-to-bake pie shell, thawed
- 2 cups milk
- 3 eggs
- 1 cup sweetened flaked coconut
- 1/2 cup sugar
- 6 tablespoons all-purpose flour
- 1 tablespoon butter
- 1 teaspoon vanilla extract
- 1/8 teaspoon salt
- 2 cups frozen whipped topping, thawed

1 Stir together pudding mix and milk in saucepan
- 1 package (6-serving size) vanilla cook and serve pudding and pie filling mix *
- 3 cups milk 8 (1.55 oz. each) Milk Chocolate Bars, broken into pieces
- 12 (two 4-oz. pkg.) single-serve graham cracker crumb crusts
- 1-1/2 cups miniature marshmallows
- 12 Milk Chocolate Bars
Best-Ever Strawberry Rhubarb Pie (no rolling required!)

For the pastry, in a medium bowl, stir together flour, sugar, and salt
- Pastry:
- 2 1/4 c. all-purpose flour
- 1/4 c. sugar
- 1/4 t. salt
- 1/2 c. shortening
- 1/4 c. cold butter, cut into small cubes
- 6-7 T. ice cold water
- Filling:
- 2 1/2 T. quick cooking tapioca (or all-purpose flour)
- 1/4 t. salt
- 3-4 c. fresh or frozen rhubarb, cut into 1/2″ pieces
- 3-4 c. fresh sliced strawberries
- 1 c. sugar
Mexican-Taco Soup

This recipe is as simple as dump, mix and simmer! Put it all in your crockpot
- EXTRAS:
- 2 lbs cooked and shredded chicken (can use ground beef or turkey)
- 5 cans diced tomatoes with jalapenos (Ro-Tel tomatoes)
- 3 cans corn (I use frozen or fresh corn)
- 2 cans kidney beans
- 1 can pinto beans
- 3 pks taco seasoning
- 3 pks ranch dressing powder mix
- 1-2 large white onions, chopped
- 6 stalks of celery, chopped
- 4 cloves garlic, chopped
- 1 quart chicken stock or water
- Cilantro, avacado, taco chips, shredded cheese, sour cream as toppers.
Loaded Mashed Potato Casserole #2

Peel and chop potatoes, place into a large stockpot
- 5 lb russet potatoes
- 1/2 cup butter
- 8 oz cream cheese, cubed
- 1 cup sour cream
- 2 cups cheddar cheese, divided
- 2.8 oz jar real bacon pieces (or 10 slices bacon, cooked and crumbled)
- 4 green onions, sliced thin
- 2 teaspoons kosher salt
Grilled BBQ Chicken Pizza

1 Heat gas or charcoal grill
- 1 can Pillsbury® refrigerated artisan pizza crust with whole grain
- Cooking spray
- 2 cups coarsely chopped cooked chicken breast
- 3/4 cup barbecue sauce
- 2 cups shredded reduced-fat mozzarella cheese (8 oz)
- 1/2 cup thinly sliced red onion
- 1 tablespoon chopped fresh parsley or cilantro, if desired
Haupia Cake

Prepare cake mix according to package directions using 2/3 cup coconut milk, water, and egg whites
- Cake Batter:
- 1 pkg White cake mix (for 9X13" pan)
- 1 C Coconut milk
- 2/3 C Water
- 2 Egg whites
- Haupia Filling:
- 2 C Coconut milk
- 1/2 C Sugar
- 1/4 tsp Salt
- 3 Tbsp Cornstarch
- 1/2 C Water
- 1 tsp Vanilla
- Frosting:
- 1 Tbsp Unflavored gelatin
- 2 C Heavy cream
- 6 Tbsp Sugar
- 1 tsp Lemon extract
- Shredded coconut to taste
Chicken & Wild Rice Soup #2

In a Dutch oven over medium heat, combine 2 cans broth, carrots, celery, onion, mushrooms and rice
- 3 (14 oz.) cans chicken broth, divided
- 1 c. carrots, peeled and coarsely chopped
- 1/2 c. celery, chopped
- 1/2 c. onion, chopped
- 2 c. sliced mushrooms
- 1/2 c. wild rice, uncooked
- 2 T. butter
- 1/4 c. all-purpose flour
- 4 t. salt
- 1/4 t. pepper
- 1 c. whipping cream
- 2 c. cooked chicken, diced
- Optional: sour cream, snipped fresh chives
Make-Ahead Mashed Potatoes

Mash potatoes in a large bowl; blend in cream cheese, sour cream and butter
- 5 lbs. potatoes, peeled, quartered and boiled
- 3-oz. pkg. cream cheese, softened
- 2 c. sour cream
- 1 T. butter, softened
- salt, pepper and paprika to taste
Basically Awesome Bread Pudding

- 6 slices day-old bread
- 2 tablespoons butter, melted
- 1/2 cup raisins, optional
- 4 eggs, beaten
- 2 cups milk
- 3/4 cup white sugar
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
