Butternut Squash Pie

Line 9-in. pie plate with pastry; trim and flute edges
- Pastry for single-crust pie (9 inches)
- 1-1/4 cups sugar
- 4-1/2 teaspoons cornstarch
- 1 tablespoon ground cinnamon
- 3 cups mashed cooked butternut squash
- 1/2 cup butter, softened
- 2 eggs
- 1/4 cup water
- 3 teaspoons vanilla extract
- Whipped cream, optional
Strawberry Cheesecake Cupcakes

Preheat oven to 350 F and prepare 6 – 8 muffin tins
- Cream Cheese Frosting:
- 3/4 c all-purpose flour
- 1/2 t baking powder
- 1/4 t salt
- 6 T unsalted butter, room temperature
- 1/2 c + 1 T sugar
- 1/2 t vanilla
- 1/4 c sour cream or plain yogurt
- 2 large egg whites
- 1/4 cup fresh strawberries, hulled & coarsely chopped
- 1 package of graham crackers, smashed into crumbs
- 4-oz cream cheese, softened
- 4 T butter, softened
- 1/4 teaspoon vanilla extract
- 1 cup sifted confectioners’ sugar
FOUR-LAYER DELIGHT

1st layer: Preheat over @300 degrees
- st layer:
- 1 cup flour
- 1 stick oleo (I use butter)
- 1/2 cup chopped nuts (I use pecans)
- nd layer:
- 1 (8 oz.) cream cheese (softened)
- 1 cup confectioners sugar
- 1 cup cool whip (use an 8 oz. tub)
- rd layer:
- 2 small packages chocolate instant pudding
- 3 cups milk
- Chopped nuts
Furikake Pasta Chicken Salad

Dressing: Place all ingredients in a glass jar
- Dressing:
- 1/4 cup furikake (Japanese seasoned seaweed mix)
- 3/4 cup sugar
- 1/3 cup red wine vinegar
- 1/2 cup vegetable oil
- 1/3 cup soy sauce
- 1/2 teaspoon grated ginger
- 1 teaspoon sesame oil
- Salad:
- 1 package (12 ounces) pasta (rotelle, or bow tie, etc.)
- 1/2 rotisserie chicken, cooled and shredded 1 bunch fresh spinach

- 1 1/2 1 1/2 1/2 cups pecans, chopped
- 1/3 1/3 1/3 cup frozen orange juice concentrate, thawed, undiluted

- 2 egg whites
- 1/8 tsp. salt
- 1 1/3 cups powdered sugar, sifted
- 1/2 tsp lemon juice
- 1 tsp. cinnamon
- 2 1/2 cups + 1 tblsp ground unblanced almonds

- 2 boxes of Instant French Vanilla Pudding, made as directed
- 1 c. sour cream
- 1 c. Cool Whip
- 6-8 sliced bananas

Makeover Frozen Chocolate Pie

Place egg whites in a small bowl; let stand at room temperature for 30 minutes
- 3 egg whites
- 1/4 teaspoon cream of tartar
- 1-1/2 cups sugar, divided
- 1/4 cup baking cocoa
- 1 tablespoon cornstarch
- Dash salt
- 3/4 cup evaporated milk
- 1 teaspoon vanilla extract
- 2 cups reduced-fat vanilla ice cream, softened
- 1 carton (8 ounces) frozen whipped topping, thawed
Chicken Lo Main

Dissolve broth granules in boiling water in small saucepan
- 2 teaspoons instant chicken bouillon granules (or 2 cubes)
- 2 cups boiling water
- 8 ounces boneless skinless chicken breasts, cut into long,thin slices
- 1/4 cup dry white wine
- 1/4 cup soy sauce
- 4 teaspoons cornstarch
- 2 teaspoons sesame oil
- 3-4 cloves garlic, minced
- 1/2 teaspoon ground ginger
- 4 green onions, chopped
- 1/2 can water chestnut, chopped
- 2 cups finely shredded cabbage
- 1 cup thinly sliced celery
- 1 cup frozen green pea, thawed and drained
- 1 carrot, shredded
- 8 ounces thin spaghetti, cooked and drained
