Five a Day Gelatin

In medium-sized saucepan, dissolve gelatin in applesauce over low heat, about 2 to 3 minutes
- 2 (4 serving each) packages strawberry-flavored gelatin
- 1 (15 ounce) jar applesauce
- 1 (6 ounce) can frozen orange juice concentrate
- 1 (12 ounce) can lemon-lime soda (1 1/2 cups)
- 2 bananas, peeled and sliced 1/4-inch thick
Gwyneth Paltrow's Sweet Potato & 5-Spice Muffins

Preheat the oven to 400°F
- 1 large sweet potato
- 1/2 cup extra virgin olive oil
- 1/2 cup unsweetened almond milk
- 3/4 cup good-quality maple syrup or xylitol, plus 2 extra tablespoons for brushing the muffins
- 1 teaspoon pure vanilla extract
- 2 cups gluten-free flour (if the flour doesn’t include xanthan gum, add 1 teaspoon)

Black Bean Pork and Zucchini

1. To prepare the pork, cut pork crosswise into 3-inch pieces
- Pork:
- 3/4 pound pork tenderloin, trimmed
- 1 tablespoon Shaoxing (Chinese rice wine), dry sherry, or sake
- 1 tablespoon low-sodium soy sauce
- 1 teaspoon cornstarch
- Sauce:
- 1/2 cup water
- 2 tablespoons Shaoxing (Chinese rice wine), dry sherry, or sake
- 1 tablespoon black bean and garlic sauce (such as Lee Kum Kee)
- 2 teaspoons cornstarch
- 1/4 teaspoon salt
- Remaining ingredients:
- 1 pound zucchini
- 2 tablespoons canola oil, divided
- 1 tablespoon minced peeled fresh ginger
- 1/4 cup thinly sliced green onions
- 3 cups hot cooked short-grain rice

- Nonstick cooking spray
- 8 ounces mafalda (wide, ripple edge) pasta or spaghetti see savings
- 2 slices raisin bread or cinnamon-raisin bread, torn into small pieces see savings
- 1/4 cup milk
- 1 pound lean ground beef
- 1/2 cup finely chopped onion
- 1 egg, lightly beaten
- 1/2 teaspoon dried oregano, crushed
- 1/4 teaspoon salt
- 2 cups sliced zucchini and/or summer squash

- 1 tablespoon olive oil
- 1 roasting chicken, about 4 pounds
- 3/4 teaspoon seasoned salt

Place 2 cups flour in a large mixing bowl
- 3 Cups all-purpose flour
- 2 (1/4- ounce) packages of active dry yeast
- 1 teaspoon salt
- 2 tbs. sugar
- 1/4 cup non fat dry milk
- 1-1/4 cups warm water (105-115 degrees)
- 1 large egg slightly beaten
- 8 tbs. butter melted
- 2 tbs. butter flavored vegetable shortening
Slow Cooker Cranberry-Apricot Pork Roast

Lightly brown the pork roast on the stove top, just a minute or so on each side
- Approx. 2.5 lb. lean Pork Roast
- 5 small potatoes, cubed
- 1 small onion, diced
- 1 can, whole-berry cranberry sauce
- 1 can apricot halves, in juice, drained
- 1/2 cup chopped dried apricots
- 1/2 tsp. cayenne pepper
- 1 tsp. dry ground mustard
- 2 tsp. turbinado (or regular) sugar
