1. Bring large pot of salted water to boil
- 8 ounces rotini pasta (such as Barilla Plus)
- 1 small red onion, thinly sliced
- 3 tablespoons finely chopped fresh oregano
- 1/2 cup low-sodium chicken broth
- 3 tablespoons white balsamic vinegar
- 2 cups cooked, shredded chicken breast
- 1 can (15.5 ounces) black beans, drained and rinsed
- 1/4 cup chopped green olives
Betty's Fluffy White Filling and Frosting

Mix 1 cup milk with 2 ½ tablespoons cornstarch and cook until thickened, stirring constantly

French Buttercream Frosting

Combine milk and water in mixer until dissolved
- 3/4 cup non-fat dry milk
- 1/2 cup cold water
- 2 cups Crisco (or) Sweetex shortening (high ratio bakery type)
- 1 teaspoon salt
- 1 heaping tablespoon Meringue powder **See Note
- 2 teaspoons butter/vanilla (or) flavor of choice
- 2-1/2 pounds sifted confectioners' sugar.
