Chicken Chili

1. Put oil in the bottom of soup pot
- 2 tablespoons olive oil
- 1 onion chopped
- 3 cloves garlic chopped
- 1 can green chiles
- 2 teaspoons cumin
- 1 teaspoon oregano
- 1 teaspoon cayenne pepper
- 2 boxes of chicken broth (or you can use your own stock)
- 2 cans of great northern beans
- 2 bone in chicken breasts boiled and shredded
- 2 cups shredded monterey jack cheese
- salt and pepper to taste
- Sour Cream, for garnish
- Cilantro for garnish

Mix together: cottage cheese, crushed pineapple, sour cream, fruit cocktail, miniature marshmallows
- 1 cup cottage cheese
- 1 cup crushed pineapple...drained
- 1 cup sour cream

Brown Sugar-Bacon Meatloaf

Toss bacon slices with brown sugar; place in a skillet over medium heat
- 4 slices bacon, cut in half crosswise
- 2 t. brown sugar, packed
- 1 lb. lean ground beef
- 1/2 lb. ground pork
- 1 onion, finely chopped
- 1 red pepper, finely chopped
- 2/3 c. dry bread crumbs
- 1 egg, beaten
- 1/3 c. grated Parmesan cheese
- 1 t. Cajun seasoning
- 1 t. Worcestershire sauce
- 1/2 t. salt
- 1/4 t. pepper
- 1/3 c. milk
- 1/2 c. barbecue sauce
Easy Taco Bake

Brown ground beef and prepare as taco meat according to the seasoning package (using water)
- 1 lb Ground Beef
- 1 pkg Taco Seasoning
- 2/3 Cup Water
- Chili Cheese Corn Chips (Fritos)-to taste
- 1 Can Cheddar Cheese Soup
- 1/2 Cup Milk
- 8 to 12 oz Shredded Mozzarella
- Toppings as desired

In a soup pot, melt the butter over medium-high heat
- 2 tablespoons butter
- 1 3-pound beef top or bottom round roast
- 1 1/2 teaspoons salt
- 1 teaspoon black pepper
- 3 medium-sized onions, sliced
- 1 garlic clove, chopped
- 1 (8-ounce) can tomato sauce
- 1/4 cup barbecue sauce
- 2 tablespoons fresh lemon juice
- 2 tablespoons light brown sugar
- 1/2 teaspoon ground mustard
