Bring water to a boil. Add rice and then reduce heat
- 2 3/4 cups water
- 1 1/2 cups white rice
- 3 tablespoons vegetable or wok oil
- 2 eggs, beaten
- 2 cloves garlic, chopped
- 2 inches fresh ginger, minced or grated
- 1/2 cup shredded carrots
- 1 small red bell pepper, diced
- 4 scallions, thinly sliced on an angle
- 1/2 cup frozen peas
- 1/3 cup Tamari (dark soy sauce)
Chewy Oatmeal Raisin Cookies

In a large bowl, combine the oil, sugars, water, egg white and vanilla
- 1/3 cup canola oil
- 1/3 cup packed brown sugar
- 2 tablespoons sugar
- 3 tablespoons water
- 1 egg white
- 3/4 teaspoon vanilla extract
- 1/3 cup all-purpose flour
- 1/3 cup whole wheat flour
- 2 teaspoons ground cinnamon
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
