Banana Cream Cheese Bread

Grease and flour two 7½" x 3¾" x 2¼" or one 9"x5" loaf pan
- 2 cups all-purpose flour (300g)
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1/4 tsp salt
- 3 ripe bananas
- 1/2 stick unsalted butter at room temperature (1/4 cup/2 oz/56g)
- 4 oz cream cheese at room temperature (113g)
- 3/4 cup sugar (165g)
- 2 large eggs
- 1 tsp vanilla extract
- 3/4 cup buttermilk (180ml)
Japanese Chicken Wings

Preheat oven to 350 degrees F (175 degrees C)
- SAUCE:
- 3 pounds chicken wings
- 1 egg, lightly beaten
- 1 cup all-purpose flour for coating
- 1 cup butter
- 3 tablespoons soy sauce
- 3 tablespoons water
- 1 cup white sugar
- 1/2 cup white vinegar
- 1/2 teaspoon garlic powder, or to taste
- 1 teaspoon salt
French Salad Dressing

Combine all ingredients in a small sauce pan over medium heat
- 1/2 cup + 1 tablespoon ketchup
- 1/3 cup water
- 1/4 white granulated sugar
- 1/4 cup white vinegar
- 2 tablespoons olive oil
- 1/4 teaspoon paprika
- 1/4 teaspoon coarse grind black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper
- 1/8 teaspoon onion powder
- Pinch dried thyme
Bacon Wrapped Smokies

Preheat oven to 325 F. Refrigerate 2/3 of the bacon until needed
- 1 pound bacon, cut into thirds
- 1 14-ounce package beef cocktail wieners
- 3/4 cup brown sugar, or to taste
Apple Pie Oatmeal

1. In a medium-size microwave-safe bowl, combine the apple, ¼ cup water, cinnamon and sweetener, and stir
- 1/2 medium apple (Granny Smith or Golden Delicious), peeled and chopped
- 1 1/4 cups water, divided
- 1/2 teaspoon cinnamon
- 2 tablespoons no-calorie sweetener (or 3 packets)*
- 1/2 cup old fashioned oats
- pinch of salt (optional)
- 1/2 teaspoon vanilla extract
Steak Sauce

Place all ingredients in a small saucepan over med heat
- 1/2 cup orange juice
- 1 tablespoon orange zest
- 1/2 cup raisins
- 1/4 cup soy sauce
- 1/4 cup white vinegar
- 2 tablespoons Dijon mustard
- 2 tablespoons ketchup
- 2 tablespoons chili sauce
Vegetable Dip

Mix all ingredients in a medium bowl
- 1 cup mayonnaise (Hellmanns or Best Foods)
- 1 cup sour cream
- 1/4 cup chopped green onion (scallion)
- 1/4 cup minced parsley
- 1/4 cup chopped water chestnuts
- 1 tablespoon soy sauce
- 1/8 teaspoon garlic powder
- 1/8 teaspoon salt
Glazed Apple Cream Pie

In a medium saucepan over medium heat, combine 1/2 cup sugar, 1/2 cup milk, 1/2 cup cream, and 1/4 cup butter
- Glaze:
- 1/2 cup white sugar
- 1/2 cup milk
- 1/2 cup heavy cream
- 1/4 cup butter
- 2 tablespoons cornstarch
- 2 tablespoons milk
- 1 teaspoon vanilla extract
- 2 tart apples, peeled, cored and sliced
- 1 tablespoon all-purpose flour
- 1/4 teaspoon ground cinnamon
- 1 (15-ounce) package pastry for double-crust pie
- 1/2 cup confectioners’ sugar
- 1 tablespoon milk
- 1/4 teaspoon vanilla extract
- 1 tablespoon butter, softened
PUERTO RICAN RICE AND BEANS (HABICHUELAS GUISADAS)

In a medium caldero, sauté sofrito in oil 2-3 minutes over medium heat
- 1 tablespoon oil
- 2 heaping tablespoons sofrito *see note below about finding/making sofrito
- 8 ounces tomato sauce
- 2 cans (15-16 ounces) kidney, red or pink beans, drained and rinsed
- 1 1/2 cups (12 ounces) water
- 1 packet Sazón with Coriander and Annatto (Culantro and Achiote)
- 1 packet ham flavor (I use Goya Jamón) (optional)
- 1 teaspoon adobo (I use Goya)
- 1/2 teaspoon garlic powder
- 1/4 teaspoon dried oregano
- Ground black pepper, to taste
- 2 tablespoons Manzanilla or Spanish pimento-stuffed olives
- 1/2 pound potatoes, peeled and diced into large chunks
- Cooked white rice, for serving
