  • 12 chicken thighs (bone in, with skin)
  • 1 lb 10 oz. chorizo sausages, whole if baby ones, or cut into 4-cm chunks if regular-sized
  • 2 lbs. baby potatoes, half the larger ones
  • 2 red onions, peeled and roughly chopped
  • 2 teaspoons dried oregano
  • grated zest of one orange
  • salt to taste

Reserve the beans, cilantro, and rice for after cooking

  • 6 medium chicken thighs (skin on or off)

  • 6 green pitted olives (optional)
  • 1 can of red kidney beans (may use white beans)
  • 2 tbs fresh Cilantro leaves, no stems (optional)
  • 2 cups of cooked white rice (measurement before cooking)
