Spanish Chicken with Chorizo and Potatoes

Preheat the oven to 220°C/gas mark 7 and place 2 wire racks on the upper and lower thirds
- 3 tablespoons regular olive oil
- 12 chicken thighs (bone in, with skin)
- 1 lb 10 oz. chorizo sausages, whole if baby ones, or cut into 4-cm chunks if regular-sized
- 2 lbs. baby potatoes, half the larger ones
- 2 red onions, peeled and roughly chopped
- 2 teaspoons dried oregano
- grated zest of one orange
- salt to taste
Slow Cooker Asopao De Pollo (Chicken and Rice Soup)

Reserve the beans, cilantro, and rice for after cooking
- 6 medium chicken thighs (skin on or off)
- 2 carrots cut into large chunks (about 1.5 inches)
- 1 sweet potato peeled and cut into large chunks (about 1.5 inches)
- 1/2 an yellow onion diced
- 3 cloves of garlic diced fine
- 1 tbs sofrito
- 1 tbs recaito (or just add another tbs of sofrito)
- 1 can of tomato paste
- 5 tomato paste cans of water
- 1 tsp basil (because I like it)
- 1 tsp garlic powder
- 1 tsp onion powder
- 2 packs of Sazon
- 1 bay leaf
- 6 green pitted olives (optional)
- 1 can of red kidney beans (may use white beans)
- 2 tbs fresh Cilantro leaves, no stems (optional)
- 2 cups of cooked white rice (measurement before cooking)
Pumpkin-cinnamon Streusel Buns

To prepare buns, dissolve yeast in warm water in large bowl; let stand for 5 minutes
- Buns:
- 1 pkg Dry Yeast, about 2 1/4 teaspoons
- 1/4 cup Warm Water, 100° to 110°
- 2 3/4 cups All-purpose Flour, divided
- 1/2 cup Pumpkin Puree
- 1/2 cup 1% Low-fat Milk
- 1/4 cup Butter, melted
- 1 Tbsp Granulated Sugar
- 1 1/4 tsp Salt
- 1/4 tsp Ground Nutmeg
- Cooking Spray
- 3 Tbsp Granulated Sugar
- 3 Tbsp Brown Sugar
- 2 Tbsp All-purpose Flour
- 1 1/2 tsp Ground Cinnamon
- 2 Tbsp Chilled Butter, cut into small pieces
- Glaze:
- 3/4 cup Sifted Powdered Sugar
- 1 Tbsp Hot Water
- 1/4 tsp Vanilla Extract
Boozy Wings

Preheat oven to 450ºF. Bring a large pot of water up to a bubble and par-cook the chicken for about 5 minutes
- For the Bourbon BBQ Glaze:
- 3 to 4 pounds chicken wings, split and tips removed or drummers
- 1 cup bourbon
- 1 cup orange marmalade or preserves
- 1/4 cup dark brown sugar
- 1/2 cup ketchup
- 3 tablespoons Worcestershire
- Salt and pepper
Smoky-Sweet Roasted Pork Tenderloin

Rub pork tenderloins with oil
- 2 pork tenderloins (about 1 pound each)
- 1 tablespoon olive oil
- 4 teaspoon smoked paprika
- 1 tablespoon brown sugar
- 1 1/2 teaspoons garlic powder
- 1 teaspoon ground cumin
- 1 teaspoon oregano leaves
- 1 teaspoon salt
- 1/2 teaspoon coarse-ground black peppper
- 1/4 teaspoon cinnamon
Pizza in a Pot

In skillet over medium heat, cook sausage until no longer pink; drain
- 1 pound bulk Italian sausage
- 1 (28 ounce) can crushed tomatoes
- 1 (15 1/2 ounce) can chili beans
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (2 1/4 ounce) can sliced ripe olives, drained
- 1 medium onion, chopped
- 1 small green bell pepper, chopped
- 2 garlic cloves, minced
- 1/4 cup grated Parmesan cheese
- 1 tablespoon quick-cooking tapioca
- 1 tablespoon dried basil
- 1 bay leaf
- 1 teaspoon salt
- 1/2 teaspoon granulated sugar
- Hot cooked pasta
- Shredded mozzarella cheese (optional)
Grilled Flank Steak

Trim excess fat from steak; score steak on both sides in 1 1/2 inch squares
- 1 flank steak (about 1 1/2 pounds)
- 1 cup vegetable oil
- 1/2 cup firmly packed brown sugar
- 1/2 cup soy sauce
- 1/4 cup red wine
- 1 tablespoon minced garlic
- 1 tablespoon minced ginger root OR 1 teaspoon ground ginger
Cheeseburger Macaroni *(GOOD)*

- Sauce Packet:
- 1 pound ground beef
- 1 cup hot water
- 2 cups milk
- 1 1/2 cups elbow macaroni
- 1 tablespoon corn starch
- 2 teaspoons paprika
- 1 teaspoon onion powder
- 1 teaspoon garlic
- 1 teaspoon salt
- 1 teaspoon sugar
- 1 cup cheddar, shredded plus 1/2 cup for topping
Pine Nut Wedding Cookies

1.In food processor, pulse pine nuts and 1 cup flour until finely ground
- 2 cups pine nuts, toasted
- 10 ounces (2-1/4 cups) unbleached all-purpose flour
- 1/2 teaspoon table salt
- 8 ounces (1 cup) unsalted butter, at room temperature
- 1/4 cup granulated sugar
- 1 tablespoon pure vanilla extract
- 4 ounces (1 cup) confectioners' sugar, sifted
