Vickie’s Shredded Chicken Sandwiches

Heat oil in a skillet over medium-high heat
- 1/4 c. olive oil
- 4 boneless, skinless chicken breasts
- 1 onion, chopped
- 10-3/4 oz. can cream of mushroom soup
- 1 c. chicken broth
- 2 t. soy sauce
- 2 t. Worcestershire sauce
- 1/2 c. sherry or chickenbroth
- salt and pepper to taste
- 8 sandwich buns, split
- Optional: pickle slices,
- lettuce leaves
Original Sloppy Joe's Sandwich

In large skillet, sauté meat with red bell pepper and onion, over medium-high heat
- 1-1/2 lb ground round beef
- 4 hamburger buns, split
- 3/4 c catsup
- 3 T brown sugar
- 2 T mustard
- 1 t vinegar
- 2 T Worcestershire sauce
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1 medium red bell pepper, chopped
- 1/2 T chili powder
- 1 t paprika
- 1 t ground cumin
- 1/2 t salt
- 1/2 t black pepper, freshly ground
- 1 t dried oregano
Taco ‘Taters

Bake the potatoes, or cook them in the microwave if you are short on time
- 4 large or 6 medium potatoes ($.75) Yay for a potato sale last week!
- 2 to 3 cups leftover taco meat ($2.50)
- 2 cups shredded cheddar or pepper jack cheese ($1.25)
- Corn cobs, or other vegetable side dish ($1)
- Butter ($.10)

- 1 cup butter, softened
- 1/2 cup confectioners' sugar
- 1/4 cup cornstarch
- 1 1/2 cups all-purpose flour

1. Combine breadcrumbs and milk in small bowl, and let soak 10 minutes
- 1/4 cup fine, dry breadcrumbs
- 1/2 cup milk
- 1 pound lean ground sirloin (or a combination of sirloin and pork)
- 2 tablespoons minced fresh oregano, divided
- 1/2 cup freshly grated Parmesan or pecorino Romano cheese, plus more for serving
- 1 cup onion, finely minced
- 2 garlic cloves, minced
- 3 tablespoons minced fresh flat-leaf parsley
- 1 large egg yolk
- 1 1/4 teaspoons salt
- 1/2 teaspoon freshly ground pepper
- Olive oil
- 1/2 cup dry red wine
- Quick Marinara Sauce

In microwave melt chocolate and butter; stir until smooth
- 4 ounces unsweetened chocolate, chopped
- 3/4 cup butter, cubed
- 4 eggs
- 2 cups sugar
- 1-1/2 cups all-purpose flour
- 1/2 cup baking cocoa
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 cups (12 ounces) semisweet chocolate chips, divided
- 2 teaspoons shortening

1.If desired, partially freeze beef for easier slicing
- 12 ounces beef flank steak or bite-size strips of chicken or turkey
- 1 tablespoon purchased or Homemade Fajita Seasoning*
- 4 to 6 8-inch flour tortillas

- 1 cup thin strips of red or green sweet pepper (1 medium)

- 1 pound chicken wings, thighs or legs
- 1/2 teaspoon Adobo seasoning
- 1 tablespoon olive oil
- 2 tablespoons sofrito
- 1 packet Sazon seasoning with annatto
- 1 tablespoon + 1 teaspoon powdered chicken bouillon
- 1/4 cup tomato sauce
- 1 teaspoon dried Italian seasoning
- 2 cups water
- 1 cup potatoes, chopped
- 1/2 cup carrots, sliced
- 2 bay leaves
