Slow Cooker Pot Roast and Vegetables

1 Spray 3 1/2 to 4-quart slow cooker with cooking spray
- 4 medium potatoes, peeled, each cut into 6 pieces
- 4 large carrots, cut into 1-inch pieces
- 1 large onion, thinly sliced
- 1 dried bay leaf
- 1 tablespoon all-purpose flour
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1 beef top round steak, 1/2 inch thick (1 1/2 lb), cut into 4 serving pieces
- 1 1
- 3/4 cups beef-flavored broth (from 32-oz carton)
- 1 teaspoon Worcestershire sauce
- 2 tablespoons cornstarch

- 2 cups all-purpose flour
- 1 cup butter, softened
- 1/3 cup heavy whipping cream
- Granulated sugar, to taste
- 1 1/2 cups powdered sugar
- 1/2 cup butter, softened
- 1 teaspoon vanilla
- 3 to 5 drops red liquid food color
Honey Pork Oriental

Cut pork in 1-inch squares, discarding bones
- 2 pounds pork shoulder steaks
- 2 tablespoons oil or melted shortening
- 1 envelope French's Brown Gravy Mix
- 3/4 cup water
- 1/4 cup honey
- 3 tablespoons soy sauce
- 2 tablespoons red wine vinegar
- 1 teaspoon ginger
- 1/2 teaspoon garlic salt
- 4 carrots, thinly sliced
- 1 medium onion, cut in 6 wedges
- 1 green pepper, cut in squares
- Cooked rice (I use white rice)
- Cut pork in 1-inch squares, discarding bones. Brown pork in oil in large skillet, stirring frequently, 15 minutes.
- Combine brown gravy mix, water, honey, soy sauce, vinegar, ginger, and garlic salt. Add to skillet, cover and cook 20 minutes. Add carrots, cook 10 minutes. Add onion and pepper, cook 5 to 10 minutes.
- Serve with rice.
- Makes 4 to 5 servings.
Macadamia Chocolate Chip Shortbread Cookies

Line cookie sheets with silpat baking mats or parchment paper
- 1/2 cup unsalted butter, softened
- 1/3 cup cane sugar (also called turbinado or sugar in the raw)
- 1 teaspoon vanilla extract
- 1 1/4 cups all purpose flour
- 1/2 teaspoon salt
- 1/3 cup macadamia nuts, finely crushed
- 1/2 cup mini chocolate chips
Pressure Cooker Spanish Rice and Sausage

1. In 5-7 quart pressure cooker, heat oil over medium-high heat
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 medium celery ribs, chopped
- 1 garlic clove, finely chopped
- 1 pound sweet Italian pork sausage, casings removed
- 1 1/2 cups long grain rice
- 1/4 teaspoon dried oregano
- 1/4 teaspoon pepper
- 2 1/2 cups chicken stock
- 14 1/2 ounce can of tomatoes in juice, drained and chopped, juices reserved
Pumpkin Butterfinger Cupcake

1. Preheat oven to 350 degrees and line pans with cupcake liners
- Butterfinger Buttercream:
- 1 box white or yellow cake mix (or spice cake mix and omit spices)
- 1 Tbsp. pumpkin pie spice
- 1 tsp. cinnamon
- 15 oz. pumpkin puree
- 3 eggs
- 1/2 C. oil or applesauce
- 2 tsp. vanilla extract
- 4 Butterfingers, normal sized
- 1 C. butter, softened (or 1/2 C. butter and 8 oz. cream cheese)
- 3-4 C. powdered sugar
- 1 tsp. vanilla extract
- extra Butterfingers for decoration
Italian Roasted Vegetables

Preheat oven to 425°F. Combine all ingredients in large bowl; toss to coat
- 1 medium zucchini, sliced 1/4-inch thick
- 1 medium yellow summer squash, sliced 1/4-inch thick
- 1 medium red onion, sliced 1/4-inch thick
- 1 tablespoon Canola Oil
- 1/4 teaspoon dried basil
- 1/4 teaspoon salt
- 1/8 teaspoon ground black pepper

- 1 pound mild Italian sausage, casings removed
- 1/2 pound ground chuck
- 1 small onion, chopped
- 12 ounces ziti, cooked according to package directions
- 4 cups marinara sauce
- 1 pound sliced mozzarella cheese, divided
- 1/4 cup grated Parmesan cheese
Triple Cheese Mac

In a saucepan over medium heat, whisk together margarine, garlic and flour
- 6 T. margarine
- 2 cloves garlic, pressed
- 1/4 c. all-purpose flour
- 3-1/2 c. milk
- 1 T. spicy brown mustard
- salt and pepper to taste
- 1 c. shredded sharp Cheddar cheese
- 1/2 c. shredded American cheese
- 1/4 c. grated Parmesan cheese
- 16-oz. pkg. elbow macaroni, cooked
- 1/4 c. dry bread crumbs
