Apricot Chicken Stir-Fry

In large skillet or wok, stir-fry chicken in canola oil for 3 minutes
- 1/2 pound boneless skinless chicken breasts, cut into strips
- 1 teaspoon canola oil
- 1 cup fresh snow peas
- 6 tablespoons apricot preserves
- 1/4 cup water
- 1 garlic clove, minced
- 1-1/2 teaspoons sesame oil
- 1 teaspoon sesame seeds, toasted
- 1 teaspoon reduced-sodium soy sauce
- 1/4 teaspoon ground ginger
- 1/4 teaspoon Dijon mustard
- Hot cooked rice
Garlic Lime Chicken #2

Place chicken in slow cooker
- 5 bone-in chicken thighs
- 1/2 cup soy sauce
- 1/4 cup lime juice
- 1 Tbsp Worcestershire sauce
- 2 garlic cloves, minced
- 1/2 tsp dry mustard
- 1/2 tsp ground pepper
- 1 Tbsp quick-cooking tapioca
Lightened Strawberry Pie

Cook pie crust according to manufacturer’s instructions
- Filing:
- 1 pre-made pie crust or use the crust from my Mini Apple Pecan Pies
- 8 cups strawberries, hulled
- 2/3 cup sugar
- 2 tbsp. cornstarch
- Pinch of kosher salt
- 1 tbsp. lemon juice
- 1 1/2 tsp. unflavored gelatin
- 2 tsp. cold water
Grilled Chicken with Quick Cherry Tomato Sauce

1 Preheat grill to medium heat and set for indirect grilling
- 1 chicken (5 lbs), cut up and breasts halved crosswise, if necessary
- 2 tbsp. Extra Virgin Olive Oil
- 3 tbsp. GOYA® Sazonador Total
- 1 large red onion, chopped
- 2 pints cherry tomatoes
- 1 tbsp.Red Wine Vinegar
- ¼ tsp. ground black pepper

- 1 (19.8-ounce) package brownie mix, batter prepared according to the package directions
- 1/2 gallon strawberry ice cream, slightly softened
